Homemade Granola Bars

I don't know about you guys but we LOVE LOVE LOVE granola bars in our house. We used to buy them in bulk from Costco and we'd go through them so fast. They make such a yummy snack, a quick breakfast and even a healthy dessert in some cases. Sadly, I looked at the list of ingredients a while back and was so sad. Not all the ingredients were terrible but I did see a list of preservatives and the BIG no no...milk.

SOOO....I'm now in the business of making granola bars at home. This does take a little more work and I'm still trying to perfect the recipe for my families personal tastes, but we're getting there. The great things about at home made granola bars: is that it's a great way to use nuts, seeds and dried fruit that may need to be used. You know exactly what you are eating and better yet - what your kids are eating! It's a tasty way to incorporate fruit, nuts and seeds (very essential for a vegetarian) into not only your diet but your kids diets. You can change them up as much as you want using what you have on hand or making them with what your family likes.

So I will share with you a couple of recipes I found on For the Love of Cooking that I am toying around with. Sweet and Salty Homemade Granola Bars, Tropical Granola Bars, and Homemade Granola Bars. I also found THIS cool blog with a good looking recipe for granola bars (from Ina Garten) which is also where I got this great picture. I've always been interesting in making home-made granola bars, but I haven't yet. Could you share more specifics with how you did them? And I love your beans mini-series. My husband and I are about to enter a period of our life when we won't have much money but I don't want to sacrifice eating healthy. Could you maybe have some future posts about eating well and healthy (no processed foods, limited sugars and white flours) on a strict budget? That would be great. Thanks!
