A buttery flaky pie crust is something that I don't ever want to give up, but when cutting out all-purpose flour and dairy I felt like I might have to. So I went looking for a good recipe but in the end I came up with one of my own. It turned out super simple but SO SO good.

Buttery & Flaky Whole Pie Crust
1 1/4 whole wheat flour
1/4 tsp salt
1/2 cup vegan butter, chilled and sliced
1/4 cup ice cold water
In a chilled glass bowl mix together whole wheat flour and salt. With a fork cut in the butter until it's well combined into a crumbly mixture. Then mix in the ice water until everything is well combined and a dough is formed. Wrap dough in plastic wrap and chill in the refrigerator for 2-24 hours (at the very least 30 minutes if you are really in a hurry). Once it's chilled you can roll it out on a lightly floured surface and then transfer to your baking dish.
And that's it. Enjoy this pie crust with many sweet and savory dishes!
