4th of July Food

I hadn't planned anything super special for 4th of July because of my fragile relationship with food right now...but I did end up making some delicious food (thank you to my beautiful sister Kerstin for sending me the recipe) that I thought I would share.

After dinner, at the park waiting FIREWORKS!

Smokey Portobello "Burgers" - Click the link, get the food, make this for dinner. YOU WILL NOT BE SORRY. The only thing I did differently was I made actual burgers using large portobellos and regular buns. The onions were amazing. Cook them slow and don't forget the herbs de provence.

Using the BBQ SPICE MIX from the previous recipe I made SMOKEY BBQ SWEET POTATO FRIES. I just cut up the sweet potatoes (as shown HERE), placed them on a cookie sheet, drizzled a little olive oil, then sprinkled on a bit of the spices and tossed to coat. Baked at 425 for about 20 minutes, flipping halfway through and they were golden! This is definitely the only way I'll be doing sweet potato fries in the future.

I also cut up some fresh strawberries and threw them on a huge sugar cookie that was topped with cream cheese frosting. Finished it off with some fresh blueberries...and it ended up looking like the American Flag....weird ; ) Of course the FRUIT PIZZA tasted amazing. There are a million recipes out there, but really....they are all about the same in my opinion (I say this in hopes of finding someone out there who has a recipe that blows everything else out of the sky - you know...like a firework).


Well, I hope you had a great Independence Day. I sure did. It was wonderful to just be with my two favorite people in the world but the food wasn't bad either!

From a husband's perspective these were AWESOME!!! They will make you forget about meat burgers.
